Black garlic

Have been surprisingly out of the loop on this until a friend mentioned it - I thought maybe it was some odd breed of garlic that is making inroads into US culture from its homeland along the rough shores of the Caspian Sea or some such, but it turns out it's garlic that has been fermented, and, given the descriptions I've read, I would bet it's like fermented black beans, yet somehow more impossibly epic. I do remember after prom in high school, when I first had some fermented black bean paste, because Joe Miller's freethinking dad Ellis provided some with the egg rolls (?).

Let's just hope/pray, as a people, that this proves to be as revelatory.
